Here’s your complete guide to all the Michelin star restaurants on the French Riviera and Monaco, as unveiled by the MICHELIN Guide on 16 March 2026. The eight new restaurants on the French Riviera to receive a Michelin-star are highlighted in red. Below, you can also find out the criteria that inspectors look for when deciding which restaurants should have a Michelin star bestowed upon them.

How are Michelin Stars awarded?

According to the Michelin Guide, their inspectors rate the quality of a restaurant’s food based on five criteria:

  • quality of the ingredients used,
  • mastery of flavour and cooking techniques,
  • the personality of the chef in the cuisine,
  • harmony of flavours, and
  • consistency between visits.

It is all about the food, and interestingly, when awarding MICHELIN stars, the inspectors do not look at the interior decor, table setting, or service quality at all.
