Indulgent Chocolate Dessert Recipe

Who doesn’t love an indulgent chocolate dessert? Well a birthday celebration is the perfect time to spoil your loved one. And impress them with your baking skills in your South of France home. This iconic French recipe, Fondant au Chocolat, is my go-to whenever I want to serve delicious soft-centered individual chocolate cakes. It’s also super quick and easy (but please don’t tell anyone).

Fondant au Chocolat Recipe

Ingredients (for 6 people)

  • 170g of good quality dark chocolate for cooking
  • 70g of unsalted butter
  • 50g of caster sugar
  • 3 large or 4 small eggs
  • 50g of flour

Kitchen Utensils

  • 6 ramekins or special fondants baking dishes 
  • 2 spatulas
  • 1 whisk
  • 2 glass bowls
  • 1 sieve

Preparation

  • Pre-heat the oven to 220 degrees
  • Break up the dark chocolate into squares and place it into a glass bowl
  • Add the butter and place the bowl into a microwave for 60 seconds at 900w (alternatively, you can do it the traditional way, in a bain-marie)
  • Remove the bowl, using an oven glove. Take out a spatula, mix the chocolate and butter until you get a shiny appearance then set aside
  • Break the eggs into the second bowl, add the sugar and mix with a whisk until the mixture starts to whiten
  • Next pour the chocolate mixture into the bowl and continue blending
  • Finally add the sifted flour and combine all the ingredients
  • Pour the chocolate batter into the buttered ramekins and put them on the middle shelf in the oven
  • Bake for about 7-8 minutes (you might have to play around with the time a bit depending on your oven)

You will know they are ready to come out when the top of the cakes starts to show small cracks. For an even more indulgent dessert, pour some melted chocolate over the Fondants. You could also serve some vanilla ice-cream or crème fraiche on the side. And don’t forget to sprinkle some flower petals around the plate for a romantic finishing touch!
Insider tip: Don’t stress too much about the cooking time, if you cook it a couple of minutes longer, you will end up with a delicious moelleux au chocolat!
