Il ravira toute la famille (sauf les v\u00e9g\u00e9taliens !) et est parfait pour le week-end, car il n\u00e9cessite au moins 3 heures de cuisson lente.<\/p>\n<h2><strong>Ingr\u00e9dients (pour 6 \u00e0 8 personnes)<\/strong><\/h2>\n<ul>\n<li>2 kg de viande de b\u0153uf, coup\u00e9e en cubes de 2 cm (joue de b\u0153uf), <em>joue de boeuf<\/em> et le steak de paleron, <em>paleron<\/em>)<\/li>\n<li>150 g de morceaux de bacon (<em>lardons, sans nitrites\u00a0<\/em>si vous pouvez les trouver)<\/li>\n<li>5 grosses carottes, coup\u00e9es en tranches<\/li>\n<li>3 oignons bruns ou blancs, grossi\u00e8rement hach\u00e9s<\/li>\n<li>3 gousses d'ail,<\/li>\n<li>1 bouquet garni (un peu de persil, une branche de thym, 2 feuilles de laurier)<\/li>\n<li>6 tomates m\u00fbres, blanchies \u00e0 l'eau bouillante puis pel\u00e9es et d\u00e9barrass\u00e9es de leurs p\u00e9pins<\/li>\n<li>1 branche de c\u00e9leri, grossi\u00e8rement coup\u00e9e en tranches<\/li>\n<li>75 cl de vin rouge (de pr\u00e9f\u00e9rence un C\u00f4tes de Provence)<\/li>\n<li>10 cl d'huile d'olive extra vierge<\/li>\n<li>1 cuill\u00e8re \u00e0 soupe de concentr\u00e9 de tomates<\/li>\n<li>200 g de c\u00e8pes (frais ou secs)<\/li>\n<li>Sel et poivre fra\u00eechement moulus selon le go\u00fbt<\/li>\n<li>Persil<\/li>\n<\/ul>\n<h2><strong>Pr\u00e9paration<\/strong><\/h2>\n<h3>1. Mariner la viande<\/h3>\n<p>Placer les morceaux de b\u0153uf dans un grand bol. Ajoutez le vin rouge, un oignon \u00e9minc\u00e9, une carotte \u00e9minc\u00e9e, une gousse d'ail \u00e9minc\u00e9e et le bouquet garni. Placez le tout dans le bas de votre r\u00e9frig\u00e9rateur et laissez mariner pendant 1 jour.<\/p>\n<h3>2. Pr\u00e9parer le <em>Daube<\/em><\/h3>\n<div>Le lendemain, \u00e9goutter la viande et mettre la marinade de c\u00f4t\u00e9. Faites chauffer l'huile d'olive dans une grande cocotte antiadh\u00e9sive et faites frire la viande et les morceaux de bacon \u00e0 feu vif pendant 5 \u00e0 10 minutes, en veillant \u00e0 ce que le b\u0153uf soit bien dor\u00e9 sur toute sa surface.<br \/>\nRetirer la viande avant d'ajouter les oignons grossi\u00e8rement hach\u00e9s. Faire cuire jusqu'\u00e0 ce qu'ils deviennent translucides, puis ajouter le c\u00e9leri, les carottes en tranches, les tomates pel\u00e9es et le concentr\u00e9 de tomates.<br \/>\nLaisser les l\u00e9gumes ramollir quelques minutes avant de verser la marinade et la viande dans la cocotte. Saler et poivrer \u00e0 volont\u00e9 et porter \u00e0 \u00e9bullition.<\/div>\n<h3>3. Cuisson lente<\/h3>\n<p>Couvrez avec un couvercle et faites cuire \u00e0 feu doux pendant 3 \u00e0 4 heures jusqu'\u00e0 ce que la viande soit tendre et succulente. V\u00e9rifiez r\u00e9guli\u00e8rement et ajoutez de l'eau si elle s'est \u00e9vapor\u00e9e.<\/p>\n<h3>4. Touche de finition<\/h3>\n<p>Une heure avant de servir, ajoutez les champignons (si vous utilisez des champignons s\u00e9ch\u00e9s, \u00e9gouttez-les avant de les ajouter). Lorsque le rago\u00fbt est pr\u00eat, servez-le chaud, avec des p\u00e2tes, des gnocchis ou de la pur\u00e9e de pommes de terre, et d\u00e9corez avec du persil hach\u00e9.<br \/>\n<strong>Insider Tip<\/strong>: La daube sera encore meilleure le lendemain, car toutes les riches saveurs auront l'occasion de se m\u00e9langer.
