For this recipe, I&#8217;ve used beef but you can easily replace it with chicken or even prawns. The result will be just as delicious.<\/p>\n<h2>Vietnamese Beef and Rice Noodle Salad Recipe<\/h2>\n<h2>Ingredients (for 6 people)<\/h2>\n<ul>\n<li>200g rice vermicelli noodles<\/li>\n<li>350g rump steak, thinly sliced<\/li>\n<li>4 garlic cloves, crushed<\/li>\n<li>2 tablespoons of fish sauce<\/li>\n<li>3 teaspoons of mild curry powder<\/li>\n<li>1 teaspoon of fresh grated ginger<\/li>\n<li>2 medium carrots<\/li>\n<li>1\/2 medium daikon<\/li>\n<li>1 small green cucumber<\/li>\n<li>8 medium lettuce leaves, shredded<\/li>\n<li>1 cup of beansprouts<\/li>\n<li>2 teaspoons of peanut oil<\/li>\n<li>1\/2 cup chopped fresh mint<\/li>\n<li>1\/2 cup chopped fresh coriander<\/li>\n<li>110 g unsalted roasted peanuts, chopped<\/li>\n<\/ul>\n<h2>Preparation<\/h2>\n<ol>\n<li>Combine beef, sauce, curry powder, garlic and ginger in a bowl. Mix well, cover then refrigerate for 3 hours or overnight.<\/li>\n<li>Place noodles in a heatproof bowl, cover them with boiling water, let stand for 3 minutes.<\/li>\n<li>Check if they are cooked then drain and put aside.<\/li>\n<li>Cut carrots, daikon and cucumber into thin strips.<\/li>\n<li>Combine lettuce, bean sprouts and vegetable strips in a large bowl.<\/li>\n<li>Heat oil in a wok or pan, then add the beef in batches. Stir-fry until beef is browned and tender.<\/li>\n<li>Next combine the beef with the vegetable and noodles.<\/li>\n<li>Add the mint, coriander and peanuts and mix well.<\/li>\n<li>Finally garnish with a few mint and coriander leaves.<\/li>\n<li>If you would like some extra dressing, you can mix some lime juice, peanut oil and a splash of soy sauce.<\/li>\n<\/ol>\n<p><strong>INSIDER TIP<\/strong>: If you wonder where you can enjoy a delightful Vietnamese dinner on the <a href=\"https:\/\/www.rivieraedition.com\/\">C\u00f4te d&#8217;Azur<\/a>, head to <em>Le Pousse-Pousse<\/em> restaurant in Juan-les-Pins.
